For Christmas and New Year’s Eve, all right, we’re eating. In fact, the pleasures of eating in Normandy can be found here for a 100% local produce Christmas in Seine-Eure!!

But to put turkeys and other chestnuts before the log there is a regional treasure that all of France envies: the trou normand! This festive season 2022, we asked the young chef at La Cascade Insolite in Le Vaudreuil, Julien Vinet, to give us a little revisit to this great Normandy classic of festive tables. He gives us a traditional but original take on this national heritage, easy for your guests to make and 100% Normandy!

  • Caramelise a brunoise of apples in a frying pan with butter (Norman…) and sugar.
  • Flambé with calva.
  • Place in the centre of the plate, add a few slices of roasted hazelnut then a granita of cider taken from the freezer.
  • Cover with chantilly lightly flavoured with calva.
  • Finally, arrange small pea shoots and a thin tuile of brick leaf for decoration and the little extra that changes everything: a powder of black olives.

Eat while the caramelised apples are still warm!
