But to end your New Year’s Eve meal in style and without choking, what could be better than a very Norman fruit: the pear. But not just any pear! And not just any recipe. Alice Picard, manager and head pastry chef of the brand new Seine-Eure gourmet restaurant “La Table d’Alva” in Le Vaudreuil, who trained with Michelin-starred chefs in the finest restaurants, was kind enough to share her recipe for Pochée Pear with Spices and Chocolate Sauce. A simple but highly gourmet version of this gastronomic classic for the festive season!
